Why Might a Restaurant Use Consignment Wine?

Restaurants use consignment wine primarily to access rare, older, or difficult-to-source bottles without making the same upfront inventory investment required by a traditional purchase.

That can be especially useful for restaurants trying to build vintage depth.

Current-release wines are generally easier to source through traditional channels. Older vintages, rare allocations, large formats, and discontinued wines can be much harder to replace consistently.

Consignment can help fill that gap.

It can also improve capital efficiency because the restaurant may not have to tie up cash in the bottle before it sells.

The key question is still whether the wine improves the program.

A consigned bottle should strengthen the list, create useful depth, or offer something compelling to the guest. Availability alone isn’t enough.
