What Is a Good Beverage Cost Percentage?

There is no single beverage cost percentage that is automatically “good” for every restaurant.

The correct number depends on the restaurant’s product mix, pricing, concept, sales volume, and the role different beverage categories play in the business.

A high-volume cocktail bar should not necessarily have the same cost structure as a restaurant selling premium wine.

The more useful question is:

What is producing the percentage?

A higher beverage cost may be justified if the program is generating strong gross profit, selling premium products consistently, and moving inventory efficiently.

A lower percentage can still be unhealthy if aggressive pricing suppresses sales or inventory sits untouched.

The target should reflect the business model.

The percentage alone should not become the strategy.
