How Do You Know When Wine Inventory Isn't Moving?
Start with age and sales activity.
Your PMIX tells you what guests are buying. An aged inventory report shows you what they are not.
If a wine has gone months without selling, ask why.
Is the price wrong? Is it buried on the wine list? Does the staff understand how to recommend it? Did you simply buy too much? Or was the wine intentionally purchased to age?
Slow movement is not automatically a problem. A mature Burgundy held strategically should not be judged the same way as a mid-priced white wine that nobody has ordered in a year.
Every aged position should have a reason to exist.
If it does not, the bottle is not creating depth.
It is tying up capital.
