How Much Beverage Inventory Should a Restaurant Carry?
A restaurant should carry enough beverage inventory to support expected demand without tying up unnecessary cash in products that are not moving.
There is no universal bottle count or inventory dollar amount.
The right level depends on sales volume, storage space, supplier reliability, delivery schedules, seasonality, allocations, events, and the type of beverage program.
Inventory should also change with the business.
If a busy season is approaching, building inventory ahead of demand may make sense. If sales historically slow during the next quarter, continuing to purchase at peak-season levels can trap cash on the shelf.
The goal is not to minimize inventory.
The goal is to have the right products, in the right quantities, at the right time.
