What Is Slow-Moving Wine Inventory?

Slow-moving wine inventory is wine that remains in stock longer than expected based on the restaurant’s normal sales pattern.

That doesn’t automatically make the bottle bad inventory.

Some wines are intentionally held for aging, vintage depth, or specific guests. Others may be moving slowly because of price, poor list placement, limited staff familiarity, or weak demand for the category.

The problem is inventory that remains stagnant without a clear reason.

A useful review begins with depletion:

When did it last sell?
How many bottles remain?
How often does the category move?
Has the restaurant continued buying it?

This is one of the reasons wine inventory management needs to go beyond physical counting. Knowing how many bottles exist is useful. Knowing which bottles aren’t moving is actionable.

The goal isn’t to eliminate every slow bottle.

It’s to know why each one is still there.
