How Do You Know If a Restaurant Has Too Much Wine Inventory?

A restaurant has too much wine inventory when the amount of wine being held exceeds the demand needed to move it at a healthy pace.

The warning signs usually include slow depletion, bottles sitting for long periods without a strategic reason, continued purchasing into already-heavy categories, and cash-flow pressure while inventory value remains high.

A large cellar isn’t automatically unhealthy. Some wines are intentionally held for aging, vintage depth, or specific guests.

The issue is whether the inventory has a purpose.

Good wine inventory management separates strategic depth from bottles that are simply tying up capital. Every position should either move, strengthen the program, or have a clear reason to remain in the cellar.

If the restaurant can’t explain why a bottle is still there, that bottle deserves attention.
