How Do Restaurants Know Which Wines to Reorder?
Restaurants should reorder wine based primarily on demonstrated demand, current inventory, and the strategic role of the bottle.
Start with depletion.
If a wine repeatedly sells through, reaches low stock, or supports a category with consistent momentum, that gives the restaurant evidence that additional inventory may have a productive home.
Then consider quantity.
A wine that sells one bottle every month doesn’t need the same reorder depth as one selling several bottles every week.
Reordering should also account for supplier availability, lead time, seasonality, allocations, and how difficult the wine would be to replace.
Good wine inventory management connects purchasing to actual guest behavior.
The goal isn’t simply to keep every SKU in stock.
It’s to deploy additional capital where the restaurant has evidence that the inventory can perform.
