Why Should Wine Purchasing Follow Depletion?

Wine purchasing should follow depletion because depletion shows where guest demand is actually consuming inventory.

Purchasing without looking at depletion can cause a restaurant to keep adding capital to categories that are already overstocked while underinvesting in wines that repeatedly sell through.

Depletion can reveal:

  • which wines consistently move

  • which categories are gaining momentum

  • which price points guests prefer

  • where stockouts are recurring

  • where inventory depth exceeds sales

That makes depletion a purchasing signal.

It doesn’t eliminate curation.

Restaurants should still introduce new producers, regions, and styles.

But a new position can begin modestly. If guests respond, the restaurant can increase depth.

Purchasing becomes more disciplined when demand earns additional inventory instead of inventory being purchased in anticipation of demand that may never appear.
